Kai Shun Premier TIM MALZER is a Japanese peeling knife. Has a 9 cm blade and a 10.5 cm handle, it is ideal for delicate operations like configuration potatoes, cut into slices of garlic, chopping onions and other vegetables.
Kai Shun Premier Tim Malzer series has a core from VG-10 steel with a hardness of 61 ±1 HRC, making the blade extremely durable and very sharp. The 32 layers of prune steel blade is resistant to corrosion and is forged in hand, a surface known in Japan as Tsuchime. The Premier series is made by Japanese master forgers from Seki city and characterized by a symmetrical laminated walnut handle, which can be used by right and left handed.
