Kai Shun Premier TIM MALZER is a Japanese Santoku knife. It has a 14 cm blade and a 11 cm handle or a 18 cm blade and a 12 cm handle, and is one of the most important chef's knife, is used for each knife having a curved blade to allow the chef to define very accurate cutting. The broad and heavy blade suits in bone cutting instruments. Generally it is knife for general cooking use. Kai Shun Premier Tim Malzer series has a core from VG-10 steel with a hardness of 61 (±1) HRC making the blade extremely durable and very sharp. The 32 layers of prune steel blade is resistant to corrosion and is forged in hand, a surface known in Japan as Tsuchime. The Premier series is made by Japanese master forgers from Seki city and characterized by a symmetrical laminated walnut handle, which can be used by right and left handed. The Kai Shun Premier Japanese knife generic is well balanced and has a permanent unmatched sharpness so the knife will cut smoothly and effortlessly and the toughest foods.
