The Kaneyoshi Saku Japan knife is ideal for cutting soft materials. It is perfect for sushi, fish, meat or vegetables. Meet the traditional Japanese knife that is sharpened only on one side for absolutely accurate and fast cutting. With its traditionally sharp and hard blade, which is made of Shiro 3 steel (it also contains iron). Shiro 3 steel contains carbon, silicon and manganese and is usually in the 61 degree Rockwell range. Blade that thanks to the composition of the metal has great strength. Kaneyoshi is a small traditional Katana sword maker and produces just four types of chef knives. The company specializes in the production of two-layer single-angle Damascus knives, according to traditional Japanese standards. ATTENTION: Shiro 3 steel contains 0.80% carbon and 0.90% manganese, it is one of the sharpest metals for kitchen knives, but it is not stainless. Proper maintenance and prevention of rust requires very careful cleaning and drying after each use. We also recommend smearing the blade with oil before and after each use.
