Kaneyoshi is a small traditional Katana sword cottage industry and produces preciscely four types of chef knives.
The company specializes in the production of two-layer single-angle damascus knives, in accordance with traditional Japanese standards. The core of the knife is 100% SK5 high carbon steel with high carbon content. This alloy is extremely tough, durable and lightweighted but sensitive to rust.
For this reason, an inox stainless steel layer is attached to the front to protect it.
Each Kaneyoshi knife is extremely sharp. The sharpening angle is 10 ° with 61-62 HRC (Rockwell degrees).
The handle is made of magnolia wood with inox o-ring.
NOT dishwasher safe.
For safety reasons, Kaneyoshi knives are not completely finished, so we recommend when buying them to use more than 1000 grid stone.
Also prior to each use it is essential to coat them with mulberry oil (alternatively sunflower oil) in order not to oxidize the knife.
