Kai Michel Bras is a Japanese knife ideal for boning. The 23 cm Titanium-plated blade creates a very strong blade and the ergonomically designed black handle in the shape of a chestnut made of multiple wood layers makes it particularly resistant to water and moisture. Each Kai Michel Bras knife has a different code and by using it each owner can register his knife on Kai's page and receive an additional year of warranty. The famous French chef Michel Bras has collaborated with Kai to bring together the best traditions of French and Japanese cutlery. Made in Japan, these knives feature sharp stainless steel blades with comfortable Pakka wood handles.
  • All knives are assembled in hand with very demanding specifications.
  • The blade has a matte finish and consists of three layers of stainless steel: VG-10 hardness for increased durability over time.
  • The blade has a titanium cover to enhance its anti-oxidising protection.
  • Each blade is engraved with a unique serial number and the emblem of Bras cistre's signature, the delicate fennel that grows in Alps above Aubrac restaurant.
  • For quick identification, each handle has the knife element number (1-7) on it, which marks the shape and operation of the blade.
  • Pakka black wood handles are designed in the traditional Japanese chestnut shape to fit comfortably in the hand.
