The Kai Wasabi Black knife is ideal for filleting. The knife guarantees an elaborate and well-groomed, smooth cut. Such cuts are especially important in the preparation of sushi. The length and shape of the blade offer the possibility for great movement during cutting.
The Wasabi Black blade
Wasabi Black range polished blades are made of new technology, rust resistant 6A / IK6 steel, with a hardness of 56 (± 1) HRC. The wide range offers double-edged knives as well as traditional Japanese single-edged knives. The slightly curved back of the knife allows a secure grip during use, making rhythmic cutting movements easier.
The Wasabi Black handle
Finally, the series owes its easy handling to the plastic handle, which is water resistant and therefore very sturdy. Its oval shape (or chestnut shape, depending on the knife) offers a pleasant, natural feel thanks to the addition of bamboo powder. The black matt handle and the polished blade made of IK6 stainless steel are permanently glued together, eliminating the possibility of dirt accumulation.
