The Yaxell Super Gou Ypsilon knife is ideal for general use. Based on the Japanese way of cutting, this knife is an essential tool for the preparation of both Asian and European cuisine. Unlike the classic vegetable knife, when using a santoku we define the tip of the knife as a guide and cut mainly with the back of the blade. Caution, we must avoid the bones.
Super Gou Ypsilon has a SG2 Micro-Carbide powder stainless steel cutting core with a super hardness of HRC63 on the Rockwell scale. The knives in the series have an impressive 193-layer blade with a splendid Damascus pattern and with its Japanese name engraved both on the blade and on the grip end.
