The Yaxell Ran knife is ideal for general use. Based on the Japanese way of cutting, this knife is an essential tool for the preparation of both Asian and European cuisine. Unlike the classic vegetable knife, when using a santoku we define the tip of the knife as a guide and cut mainly with the back of the blade. The grooved edge of the blade creates air pockets that prevent even the thinnest or softest slices from sticking to the blade. Caution, we must avoid the bones.
Ran has a VG10 stainless steel cutting core with a super hardness of HRC61 on the Rockwell scale. The knives in the series have a 69-layer blade with a notable Damascus steel pattern and its Japanese name inscribed on the blade. The black Canvas-Micarta handle is attached with two stainless steel rivets. It is a beautiful and crafted knife that delivers long lasting cutting performance.
